Preheat the pan and roast cumin seeds, green cardamom, black cardamom, fenugreek seeds, cloves, black pepper for 3 minutes.
Transfer all the roasted dry spices in blending jar and blend it
Again preheat pan and and add 2 tablespoons oil in it.
Then add finely small diced onions, garlic, ginger and cook it for 3 minutes
Then add chopped tomatoes and cooked it for some time (approximately 2 minutes)
Then add cashews in it and stir well and cover and cook for 2 minutes.
Then transfer all the material in a blending jar and add 1 tablespoon of water in it and blend it. And now our vegetable puree is ready.
Then again preheat a pan and add 2 tablespoons of oil in it.
Then add bay leaves, green chillies, turmeric powder, coriander powder, cumin powder, red chilli powder and stir well. Here don't cook all the spices for too long. Cook them for maximum 1 minute or else they will get burnt out.
Then add our vegetable puree in the pan and stir well.
Now add capsicum and large diced onions in the puree and stir well.
Now add water in the puree. You can also add some water in the blending are which you used for blending the puree and then add the same water in our the pan. You should add approximately 3-4 tablespoon of water. Cover and cook for 2 minutes.
Then again add 4-5 tablespoon of water in the pan you can add more are less water according to the thickness you prefer. Then again cover and cook it for 2 minutes.
Now add salt (according to your taste), kasuri methi and blended roasted masala in the pan and stir well.
Then add paneer cubes in the pan and 2-3 tablespoon of water and cover and cook for 2 minutes.
At the end add garam masala powder, cream and fresh coriander in the pan, stir well. Then cover and cook for 2 minutes and
Now your kadai Paneer recipe is ready to serve. You can enjoy it with roti, naan or even with rice if you like.
