First of all preheat a pan or wok and add oil in it.
Once the oil is nicely hot, add cumin seeds and mustard seeds in the oil and fry it.
Now add ginger-garlic paste, saute it well and cook for a minute until its raw flavour fades away.
Now immediately add onion because it will stop seeds from burning out. Now fry the onions properly for couple of minutes until it turns translucent.
Now add potatoes, tomatoes and also add a little salt and saute well and let it cook couple of minutes.
Now add red chilli powder and turmeric powder and saute well.
Now add water, cover the pan and let it cook for 8 minutes.
After that add spinach, cover the pan and let it cook for 5 minutes.
Now add salt. Here keep in mind, that we have already added some salt before so add accordingly.
Now your aloo palak is ready to serve. You can serve it with roti and you can even enjoy it with rice.
