Egg Poha Recipe

In this post I'm going to show you how to make egg poha recipe. Egg poha is a kinda healthy variety of traditional Kande Pohe. If you are health conscious and protein hunter like me then this is a perfect poha for you.

Ingredients

  • Poha 1 cup
  • Oil 2-3 tbsp
  • Cumin seeds 1 tsp
  • Mustard seeds ½ tsp
  • Onion 1
  • Tomato 1
  • Eggs 2
  • Red chilli powder 1 tsp
  • Turmeric powder ½ tsp
  • Salt

Instructions

  • Take poha in bowl and add water enough to sink the poha completely.
  • Just keep pressing the poha flakes with your thumb and first finger and rinse the water when the flacks started getting break down easily.
  • Once the poha is soaked properly then wash it 2-3 times with running water, rinse it and keep it aside for at least 10 minutes.
  • Now preheat a pan and add 2-3 tbsp of oil in it.
  • Then add cumin seeds and mustard seeds and let it crackin.
  • Once the seeds are cracken then add diced onions and tomatoes. Also add a little salt as well. The salt helps to soften the tomatoes fast. Now let it cook for 1-2 minutes.
  • Now add eggs in the poha.
  • Then add red chilli powder, turmeric powder and saute well.
  • Now add soaked poha and sprinkle salt. Here keep in mind that we have already added some salt so add more accordingly and again saute well.
  • Once everything is saute properly, cover the pan and let it cook for 2-3 minutes.
  • Now your egg poha is ready, garnish it with some fresh coriander and serve it with a slice of lemon.

Notes

Don't over soak or under soak the poha. Just keep checking the poha by pressing the poha flake with your thumb and first finger and if the the flacks easily breakdown then rinse the water immediately. You can add one more egg if you like but then it will dominate the taste so if you like it then go for it. Let the cumin seeds and mustard seeds nicely craken before adding onion and tomato.
